We are a family of seven, so cooking for kids, and cooking with kids is not new to us.

We love to eat together as a family. We are always trying new recipes and combinations. Some of us are more picky then others, but we are willing to share all the tried and true recipes we make.

Eggless Muffin with Berries

We make muffins that are healthy but delicious. I have used whole wheat flour, and with no eggs or milk in the house, I've adapted the recipe.

One recipe will make 24 muffins. These are great, and worth trying!


6 cups whole wheat flour
1/2 cup sugar
3 tbsp baking powder
1 tsp salt
3 tbsp cornstarch
3 cups water
3/4 cup oil plus 3 tbsp oil
frozen strawberries or blue berries

Preheat oven to 400. Mix all dry ingredients into a large bowl. Stir in water and oil. using a wooden spoon, carefully mix batter, just until everything is combined.

To make strawberry muffins, scoop 1 tbsp of batter into each muffin cup (cookie scoops work best). Press in one large frozen strawberry into the center of cup, and push it almost to the bottom. Add 1 tbsp batter onto of strawberry, and push batter around so the berry is not visible.

To make blueberry muffins, scoop 2 tbsp (cookie scoop works best) into each muffin cup. Press 4 or 5 frozen blueberries into the center of each muffin, sinking them deep into the batter. Place one berry on the very top, peaking out of the batter.

Bake muffins for about 25 minutes, or until fork is clean when poked into muffin.

Makes 24 muffins.
