We are a family of seven, so cooking for kids, and cooking with kids is not new to us.

We love to eat together as a family. We are always trying new recipes and combinations. Some of us are more picky then others, but we are willing to share all the tried and true recipes we make.

Eggless Muffin with Berries

We make muffins that are healthy but delicious. I have used whole wheat flour, and with no eggs or milk in the house, I've adapted the recipe.

One recipe will make 24 muffins. These are great, and worth trying!


6 cups whole wheat flour
1/2 cup sugar
3 tbsp baking powder
1 tsp salt
3 tbsp cornstarch
3 cups water
3/4 cup oil plus 3 tbsp oil
frozen strawberries or blue berries

Preheat oven to 400. Mix all dry ingredients into a large bowl. Stir in water and oil. using a wooden spoon, carefully mix batter, just until everything is combined.

To make strawberry muffins, scoop 1 tbsp of batter into each muffin cup (cookie scoops work best). Press in one large frozen strawberry into the center of cup, and push it almost to the bottom. Add 1 tbsp batter onto of strawberry, and push batter around so the berry is not visible.

To make blueberry muffins, scoop 2 tbsp (cookie scoop works best) into each muffin cup. Press 4 or 5 frozen blueberries into the center of each muffin, sinking them deep into the batter. Place one berry on the very top, peaking out of the batter.

Bake muffins for about 25 minutes, or until fork is clean when poked into muffin.

Makes 24 muffins.

Pancake Receipe - Berry Good



This is a recipe for a very thick and filling pancake that our family loves. We use whole wheat flour, for more vitamins. We also choose not to add sugar to the batter, because we add lots of sugary syrup to the top. When short on eggs, using cornstarch and oil is a great alternative

4 cups whole wheat flour
1 tsp salt
1 tsp baking soda
3 tbsp baking powder
4 tbsp cornstarch & 4 tbsp oil OR 4 Eggs
4 cups water
3 cups frozen berries - thawed (I use put the frozen berries into the microwave for 2-3 minutes)

Mix the dry ingredients together in a large bowl. Add the remaining ingredients and mix well. Put a small amount of butter or margarine into each hot pan. Use a 1/4 cup measure to scoop batter into the hot pans. Flip when bottom is brown and firm. Cook both sides, making sure the middle is also cooked.

Serve with syrup.

Nicole's Beef Vegetable Soup

hThis is a great way to have picky eaters eat!

My seven year old wanted to help make dinner one evening. She is my picky eater. She picked out all the ingredients, or they passed her inspection before adding to the soup. She even ate things she doesn't normally eat, because she made it. She cut up everything with supervision and decided on how much of each ingredient should go into the pot She didn't know what lentils and split peas were, but at that point she was excited to find something in the cupboard to add to the pot. It needed some salt and pepper, but it was a great idea. She now wants to make a "cookbook" of all her own made recipes.

3/4 pot of water
2 cups carrots (she cut up)
2 cups celery (she cut up)
1 small zucchini (hates it, but agreed if it was the small zucchini, and cut into large chunks, so she could pick out the pieces)
2 lbs hamburger
3 tbsp beef bullion
1 cup dry split peas
1 cup lentil beans
1 can tomato soup

Cook the hamburger in the pot, then add all the other ingredients. Bring to boil, and cook until carrots are tender, about 20 minutes.

Serve.

Roast Beef Vegetable Soup Recipe

I hate to let anything go to waste, but I can only eat so much left overs. Instead of eating another roast beef dinner, I made soup with all the leftovers. It was delicious and easy to make, ready in less than 20 minutes!

Our whole family loved it! The four year old kid that said "I don't want to eat soup," sat at the table with his bowl, and surprised us all by saying "I guess I could have more soup" after finishing the entire bowl.

Leftover roast beef, cut into long strips
Leftover vegetables (everything and anything. We had broccoli, cauliflower, carrots, and beans.)
Leftover potatoes cut into bite size, or leftover mashed potatoes (mashed makes the soup broth thick, and hides, great way to get the kids to eat potatoes and never know it)
Leftover gravy (great flavor in the broth)
Can of whole tomatoes (whole tomatoes is easy avoid scoping into a bowl of a kid that doesn't like tomatoes, while the rest of us enjoys them)
Celery
Noodles
Water

Mix as much or as little as you like, and throw in any other leftovers that are in the fridge. Bring to a boil, cook until noodles are ready, and serve.
